Mencicipi Restoran Michelin Star di Singapura
Beerita.id – Jika selama ini lebih banyak berkutat di Amerika Serikat, Eropa, dan Asia Timur, Michelin Star sejak dua tahun lalu mulai merambah kawasan Asia Tenggara. Singapura adalah negara pertama yang berhasil menyelenggarakan Michelin Guide.
Dalam sambutannya, Chan Hock Sen selaku Vice President Michelin Asia Pacificmengatakan, “Selama lebih dari 100 tahun kami mengakomodasi pelanggan dengan pilihan tempat-tempat terbaik. Singapura menjadi negara pertama di Asia Tenggara yang memiliki Michelin Guide. Tempat-tempat makan ini dipilih dengan metode pemilihan sangat ketat. Kualitas merupakan bagian yang terpenting.”
Total ada 140 restoran dan penjaja street food yang menawarkan 35 kategori makanan berbeda yang diseleksi. Dan, dari jumlah itu hanya 29 restoran yang mendapat bintang 1, 2, dan 3 Michelin. Mereka dianggap memenuhi 5 kriteria utama Michelin Guide.
Kriteria tersebut meliputi kualitas produk, teknik masak dan rasa sajian yang istimewa, kepribadian chef yang tercermin dari masakannya, value for money, serta konsistensi sajian dalam tiap kunjungan.
Untuk edisi pertamanya, Michelin Guide menobatkan Joel Robuchon sebagai restoran bintang 3 Michelin di Singapura. Sebelumnya, resto dengan sajian Prancis kontemporer ini juga mendapat banyak Michelin Star di banyak cabangnya di dunia. Termasuk Hong Kong, Las Vegas, Macau, Paris, dan Tokyo.
“Dari kualitas makanan terbaik hingga pilihan wine mencapai lebih dari 1000 referensi, pengalaman makan yang ditawarkan Chef Joel Robuchon sangat istimewa. Tiap menu dibuat dengan cara flamboyan seperti poached lobster in a spicy bouillon dan farmer’s guinea fowl with roast foiegras. Semuanya memuaskan selera siapapun yang mencoba dengan cita rasa intensif yang sulit dilupakan.”
Sementara itu, bintang 2 Michelin berhasil diraih 6 restoran termasuk Andre yang menyajikan menu Prancis dengan cara kreatif; L’Atelier de Joel Robuchon dan Odette dengan hidangan Prancis kontemporer; Les Amis; restoran sushi Shoukouwa; dan Shisen Hanten yang merupakan restoran China.
Sedangkan bintang 1 Michelin didapat 22 restoran. Termasuk Hill Street Tai Hwa Pork Noodle dan Hong Kong Soya Sauce Chicken Rice & Noodleyang menjadi street food pertama yang masuk dalam Michelin Guide. Pencapaian pertama juga diraih Osia yang membuat masakan Australia berhasil mendapat bintang 1 Michelin.
Joel Robuchon ***
Inilah restoran yang dikukuhkan sebagai yang terbaik di Singapura. Label bintang tiga didapatkan dari keseriusan restoran ini dalam menservis para tamu. Menyajikan nuansa Perancis klasik, menu di fine dining restaurant ini tak hanya lezat tetapi juga memiliki sentuhan seni.
Total ada 16 pilihan rangkaian menu yang disiapkan di tempat ini. Anda hanya tinggal memilih rangkaian apa yang akan disantap. Salah satu signature dish yang bisa jadi bahan pertimbangan adalah rolade domba atau bebek yang dikukus lambat atau slow braised.
Untuk makan di tempat ini, minimal harus menyiapkan budjet sebesar Rp 3,5 juta perpax.

Saat ini Singapura merupakan tempat pertama di dunia yang diberikan peringkat oleh Michelin Guide untuk makanan sekelas 8 Euro atau sekitar Rp 117.000. Nah, tempat itu adalah Hill Street Tai Hwa Pork Noodle, yang berkonsep sebagai warung kaki lima. Bukan restoran mahal.
Namun jangan salah, untuk mencicipi mie di sini, pelanggan harus mengantri minimal 45 menit. Citarasa mie di sini memang berbeda. Teksturnya yang lembut mampu berpadu indah dengan toping daging yang ada.
